Just to sum up and add a bit to what others have said, Cemu is a Wii U Emulator. Breath of the wild was launched originally on the Wii U as well. Cemu has been around longer and is more performant. I think dolphin is for plain Wii emulation (and game cube). Cemu is for Wii U. I think breath of the wild is for switch and Wii U so Cemu is your only choice.
